Lemon Shortbread Cookies
I am a sweets girl at heart. These Lemon Shortbread Cookies are a perfect treat to satisfy my dessert craving.
These cookies are the perfect amount of lemon with just a little bit of sweetness thrown in for good measure. They are an easy, quick roll out cookie & are great to serve for a spring affair because of their light flavor.

Lemon Shortbread Cookies
ingredients
3 cups almond flour
2 tablespoons arrowroot flour + some for rolling dough
1/2 cup maple syrup
1/3 cup coconut oil, melted & cooled
3 tablespoons lemon juice
1 tablespoon vanilla
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
zest from one lemon
directions
preheat the oven to 350º
in a medium size mixing bowl combine almond flour, 2 tablespoons of arrowroot flour, baking powder, baking soda, salt & lemon zest. give it a quick stir.
add in {cooled} melted oil, maple syrup & lemon juice & mix well. then add in vanilla, mix again.
cut 2 large sheets of parchment paper & sprinkle out a generous amount of arrowroot flour {about a heaping tablespoons worth}, spread it out & coat your hands with it.
place cookie dough onto parchment & sprinkle with a bit more arrowroot flour. lay the second sheet of parchment paper on top of the ball of dough & gently roll dough until you have flattened it out to about 1/2" thick. {remember that almond flour cookies do not expand as much as regular ones do - they will only get slightly larger overall} cut out cookies with a top of a glass or a cookie cutter {place a little bit of arrowroot flour on edge of cutter as needed}
bake 12-14 minutes, keeping a close eye on them so they don't get too brown.
