Breakfast Hash
To egg or not to egg? That is the question.
As a person who cannot eat chicken eggs, I am always on the search for something I can eat for breakfast that is a high protein meal. Enter this Breakfast Hash as the star of the show.
And if you are an egg person like my husband, adding a fried egg to the top of this Breakfast Hash will score even bigger points. Either way you eat it, it’s delicious & so nutrient dense!
Breakfast Hash
INGREDIENTS
2 pounds ground pork
1 large sweet potato, cubed small
1 large bunch kale, stems removed & chopped
2 tablespoons avocado oil
1 tablespoon coconut sugar
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon dried sage
1 teaspoon dried thyme
3/4 teaspoon primal plate breakfast blend seasoning
1/2 teaspoon nutmeg
1/2 teaspoon smoked paprika
1/2 teaspoon red pepper flakes
Quality spray oil
DIRECTIONS
preheat the oven to 450°.
Spray a cookie sheet with spray oil & place potatoes on the pan. Then, spray the top of the potatoes lightly. Bake for 15 minutes or until golden brown.
Combine all seasonings except the breakfast blend seasoning.
Heat avocado oil in a large Dutch oven skillet. Add the pork to the skillet & stir often to crumble. When pork is about halfway done, add in all the combined seasonings. (Remember to keep the breakfast blend seasoning separate) Continue browning pork until fully cooked.
Add in the kale & stir continuously until wilted but still vivid green. Add baked sweet potatoes in with the pork & kale & then stir in the breakfast blend seasoning.
Serve hot.
