Ginger Basil Vinaigrette

This Ginger Basil Vinaigrette is the epitome of summer flavor. It’s so light & fresh & will make every other flavor in your salad pop.

My favorite salad to use it on is a bed of sweet butter lettuce topped with spiced pecans, crumbled goat cheese & dried cranberries. Add a little bit of simple grilled chicken & you have an entire meal in no time at all.

Ginger Basil Vinaigrette

INGREDIENTS

1 cup olive oil

1/2 cup fresh basil leaves

1/3 cup lemon juice

1" piece of ginger root, peeled & chopped

2 cloves garlic, roughly chopped

1 tablespoon honey

1/2 teaspoon salt

DIRECTIONS

combine all ingredients in a blender & blend on low 15-20 seconds.

you want this well emulsified but you still want to see pieces of the basil in the dressing so don't let it blend so long that your basil becomes smooth.

store in the refrigerator up to 7 days.
