Maple Pecan Chocolate Chip Cookies
These cookies were inspired by a gluten-free cookie I got from this great little shop in Waco, Texas. I love to frequent this place whenever I can because they make the best prepared foods, desserts & kombucha using local ingredients. If you live anywhere near it, you should check it out!
I wanted a grain-free version that I could have anytime I wanted to make it, so I set out to re-create it at home. And let me tell you, this cookie is irresistible. It has a classic, chocolate chip cookie flavor, with wholesome ingredients. And my kids don’t like nuts in cookies which makes my husband & I very happy because these don’t get gobbled up by the munchkins.
Maple Pecan Chocolate Chip Cookies
ingredients
dry ingredients:
2-1/2 cups almond flour
1/2 cup dark chocolate chips
1/2 cup pecans, rough chopped
1/4 cup coconut sugar
2 tablespoons coconut flour
1/2 teaspoon salt
1/2 teaspoon baking soda
wet ingredients:
1/2 cup maple syrup
1/2 cup avocado oil
1 tablespoon vanilla extract
directions
preheat oven to 350
in a medium size mixing bowl, combine all dry ingredients including chocolate chips & pecans
add in the avocado oil, maples syrup & vanilla. stir well.
using a medium size cookie scoop, scoop out balls of dough onto parchment paper & then slightly flatten with palm of hand {wet your hand to keep the dough from sticking to your skin}
bake 9-11 minutes, just until edges are slightly golden
makes 2 dozen cookies
