Nutty Breakfast "Cereal"

When I was little cereal was both a staple meal & a comfort food.  Once I decided to eat grain-free, I gave up on cereal but sometimes I still miss the comfort of a crunchy bowl of goodness with some cold milk.  Now I know there are healthier ways to get my comforting fix & get real nourishment at the same time.  This mix of nuts & seeds is quick to make up & stores wonderfully in a glass container to keep on hand for a quick breakfast or snack.  Top with fresh berries or dried fruit if desired & serve with a milk alternative of choice or try my chai cashew milk or sweet coconut milk on top of it.

 
 

Nutty Breakfast "Cereal"

ingredients

2 cups chopped pecans

1 cup sliced almonds

1/2 cup shredded coconut

1/2 cup chopped walnuts

1/2 cup pepitas

optional: fresh berries or dried fruit for serving

 

directions

place all ingredients in a medium size mixing bowl & stir well.  

store in a glass container.

eat it alone as a 'trail mix' or serve with chai cashew milk or sweet coconut milk
