Oatmeal Chocolate Chip Protein Balls
these little oatmeal chocolate chip protein balls are so easy & pack nutrition into a snack! with added protein + super good for you ingredients, these are great for grabbing in between meals, packing as a snack to run errands, or sticking into a lunch box for just a bit of added protein mixed with a bit of sweet.

Oatmeal Chocolate Chip Protein Balls
INGREDIENTS
3 cups gluten-free oats
1-1/2 cups peanut butter*
3/4 cup maple syrup
1/2 cup mini chocolate chips
3 scoops chocolate protein**
2-4 tablespoons unsweet non-dairy milk
2 teaspoons vanilla
1/2 teaspoon salt
*use all natural, no added oil
peanut butter or other nut butter
**I use ancient nutrition bone broth protein.
if using a different protein powder you will
have to experiment with it to find the right amount.
DIRECTIONS
place oats, peanut butter, maple syrup, vanilla & salt in the bowl of a stand mixer*, turn on low until well blended.
then add in the chocolate chips, 2 tablespoons of the non-dairy milk & the protein, then mix again until completely combined. add in the last 2 tablespoons of non-dairy milk if needed. (this will depend on how thin or thick your peanut butter was - this mix will be very thick).
use a medium cookie scoop & roll into balls.
store in the fridge for up to 2 weeks.
*alternately you can mix this in a large
glass or stainless bowl, but keep in mind
that it gets very thick. you will need to be
ready to use some muscle!
