Pineapple Salsa
I'm super crazy about fresh salsa. This one give you the feeling you've gone away to some beautiful island. The only thing missing is the sound of the waves.
It's amazing flavor is a little bit sweet with a hint of spice. It's great with plank grilled salmon, simple grilled chicken or try it with these amazing paleo tortilla chips.
Pineapple Salsa
ingredients
2 cups fresh pineapple, finely diced {you will easily get this amount + a little extra from 1 whole pineapple}
2 roma tomates, seeded & chopped fine
1/2 cup cilantro, chopped
1 jalapeño, seeded & finely chopped
1/4 cup purple onion, minced fine
3 tablespoons lime juice
1/4 teaspoon each: salt & pepper
directions
chop up all ingredients according to description at left & place in a medium size bowl with a lid.
add in lime juice, salt & pepper, stir & cover.
refrigerate 15 minutes before serving.
