Prosciutto Melon Mint Salad
I am a summer girl through & through. And nothing says summer like a light salad, but when that salad has melons in it, you know warm days are on the horizon.
I have always loved watermelon & cantaloupe, but truly hadn’t ever gravitated toward honey dew melon. Contrary to its name, it seems to me to be the least sweet of the melon family. But when you top it with the delicious mint dressing, some salty prosciutto & crunchy pistachios, it takes on a whole new persona & makes me love it just as much as my heart throb watermelon.
This salad is so simple but makes a big impression. You can prep everything a day ahead, too & then just mix it all up when you’re ready to serve it. It will keep if there are leftovers…it won’t be quite as fresh as the first day but the flavor is definitely still there.
Prosciutto Melon Mint Salad
INGREDIENTS
1 cantaloupe melon
1 personal size seedless watermelon
1 honeydew melon
6 ounces prosciutto, chopped
¼ cup pistachios, lightly salted & chopped
¾ cup olive oil
¼ cup mint leaves
6 tablespoons lemon juice
2 tablespoon honey
½ teaspoon salt
DIRECTIONS
Use a melon baller to scoop round spheres of each melon & put them in a large bowl.
In a blender combine the olive oil, lemon juice, mint leaves, honey & salt. Blend on high for a few seconds until emulsified.
Drizzle about ¼ cup of the dressing over the melons & stir gently to coat. Garnish with , prosciutto, pistachios & extra mint leaves. Serve with extra mint dressing as desired.
