Romesco Sauce
Romesco sauce is a classic red pepper sauce that comes from Spain & OH MY GOODNESS!!! This stuff is so good. You can eat it with just about anything. It was originally created to go with fish, but it’s equally as good with chicken or beef & even over roasted veggies.
You could also use it as a dip for raw vegetables too or eat it with grain-free chips or crackers.
Romesco Sauce
ingredients
2 whole roasted red bell peppers (from a jar)
2 cloves garlic
1/2 cup whole almonds
1/2 cup olive oil
1/4 cup tomato paste
2 tablespoons red wine vinegar
1 teaspoon smoked paprika
1 teaspoon dried oregano
3/4 teaspoon salt
1/2 teaspoon peper
1/4 teaspoon red pepper flakes
a handful fresh italian parsley
directions
pulse bell pepper, garlic, almonds & parsley in a food processor several times to roughly chop. (you’ll need to scrape the sides of the bowl between each processing segment)
add in the tomato paste, red wine vinegar & seasonings & pulse several more times.
turn the food processor on low & slowly pour in olive oil until fully blended & smooth.
this can be stored in an airtight container for one week in the refrigerator. serve over any protein or veggies & enjoy!
