Waffles
{gluten-free & vegan}
Waffles are one of my favorite breakfast items. But since I am allergic to chicken eggs, it’s sometimes hard for me to enjoy them regularly.
I use duck eggs in most of my baking because they aren’t an allergen for me & they work great in baked goods. However, ducks are finicky & they only lay eggs when the weather is nice, so the farmer I get my duck eggs from doesn’t always have them available.
That’s how this waffle recipe was born. One morning, I wanted waffles & I didn’t have any eggs I could eat so I began the quest of making a gluten-free, vegan waffle. I love that it’s a great option for people who have food allergies or choose to eat vegan for other reasons.
You’ll never know these amazing waffles are anything but delicious!
Waffles
{gluten-free & vegan}
INGREDIENTS
2 cups gluten-free 1-to-1 flour
1-3/4 cup non-dairy milk
1/4 cup avocado oil
2 tablespoons coconut sugar
1 tablespoon apple cider vinegar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
DIRECTIONS
pre-heat waffle iron.
in a large bowl, whisk together the gluten-free flour, coconut sugar, baking powder, baking soda & salt.
in a separate small bowl or measuring cup, mix the dairy-free milk, oil & vinegar.
add the liquid to the the dry ingredients & whisk until well combined.
pour batter into your hot waffle iron & cook for the recommended amount of time for your specific waffle maker, or about 3-5 minutes.
top with fruit & syrup.
